Our bleu cheese is aged a minimum of 60 days. At three months, it becomes a mild bleu; at six months it is considered full-flavor bleu; at 10 months it becomes a sharp bleu cheese.
Our French muenster cheese is aged six months to a year for maximum flavor. At six months, it is a mild muenster; at 12 months it is a full-flavored muenster.
